This is the recipe that I referred to in my 29 Gifts in 29 Days posting that a few of you have been asking for. It is from an old recipe book of my Nana's, "The Scandinavian Cookbook" published in 1956. It makes me feel close to her while sifting through these pages and smelling the wonderful fragrance of a Swedish Christmas.
Sift together and set aside
1 1/2 cup sifted flour
1 tsp. baking soda
1 1/2 tsp. ginger
tsp. cinnamon
1/4 tsp. cloves
Cream until softened 1/2 cup butter.
Add gradually, creaming until fluffy after each addition,
3/4 c. sugar
Add gradually, beating thoroughly after each addition,
1 egg, well beaten
1 1/2 tsp. dark corn syrup
Blend in dry ingredients in fourths, mixing thoroughly after each addition. Chill in refrigerator for several hours.
Remove chilled dough and place on a lightly floured surface. Roll about 1/16 in. thick. Cut with lightly floured cookie cutters into various shapes. If you would like, place a slivered almond in the center of each cookie. Transfer cookies to cookie sheets.
Bake at 375F for 6 - 8 minutes.
Carefully remove cookies to cooling rakes to cool completely.
God Jul!
